"Third annual Walk & Roll" by Drew Burton, Marketing and PR Intern

The third annual Walk and Roll took place on October 11th and was a success as usual. EP!C covers an entire mile of land, and for the past three years, that land has been put to good use. The participants walk around the entire building as many times as they can. But they're not just walking for exercise. Walk and Roll is an event to raise money and awareness for breast cancer and it is improving every year. "It's getting better and better every year," said Rhoda, one of the founders of the event. As far as attendance goes, this year was the biggest turn out yet. It started out as just an idea, some way to raise awareness and money for breast cancer, similar to Race For the Cure. But more and more people have shown interest in participating in the event, making it a bigger turn out every year so far.


One thing that separates Walk and Roll from some other fund raisers is the fact that anyone can participate. No matter what physical or mental disability an individual has, he or she can still make an impact. In other words, it's an event where we are all the same. We can all make a difference. That's a big part of what makes this event special. There are no unfair advantages or disadvantages, just people uniting for one common goal which is to help end breast cancer. Rhoda intends on hosting Walk and Roll for many years to come, as it shows no signs of slowing down. It's an event that literally anyone can participate in. "We can all walk around this building and contribute and make a difference," said Rhoda when asked about this year's turn out. The world needs more people like Rhoda to help win the battle against breast cancer. One thing is for sure, everyone involved with this event refuses to lose the fight against breast cancer.

EP!C Harvest - Green Onions!


What came first, the onion or the green onion


Fortunately the answer to this is not as complicated as the answer to whether the chicken came first or the egg. Green onions, also known as scallions, are young shoots of bulb onions that have an undeveloped white bulb with a long green stalk.In other words, they are the result of onions that were harvested early. These vegetables may be small but they are packed with flavor that can be used in a variety of dishes.

Green onions can be eaten raw after proper washing, grilled, or saute. They are packed with nutrients such as vitamin K, A, and C. Vitamin K assists with bone health, vitamin A assists with eye health, and vitamin C assists with immune health. When purchasing green onions, check to make sure they have bright green stalks, crisp in texture, and a firm white base.

If a vegetable could awaken Sleeping Beauty, which vegetable would it be?
There are a variety of radishes which come in different sizes and colors. Table radishes are no larger than ping pong balls and can be red, purple, red-and-white, and pink. Red meat radishes are a type of Daikons, which are large and can reach a foot in size. Red meat radishes have a white or light green exterior color and a hot pink interior color. Unfortunately, radishes are not nutritional powerhouses, but they contain nutrients such as vitamin C, folate and potassium. Radishes can be eaten raw, after proper washing, fried, steamed, cooked or baked. Some consumers add salt or pepper to radishes to give them more taste.
